Sautéed Kale with Pine Nuts and Dried Cranberries

Sauteed Kale Pine Nuts

Ingredients
2 bunches fresh kale
2 tbsp extra-virgin olive oil
½ large red onion, chopped
1 clove garlic, minced
Salt
Ground black pepper
2 tbsp Mike and Mike’s Organics Pine Nuts
½ cup Mike and Mike’s Organics Cranberries
½ cup white wine or water

Directions

1. Heat a large sauté pan on the stove and add Mike and Mike’s Organics Pine Nuts. Stir frequently, and once toasted (they should be beginning to brown), place in a bowl and put them to the side.
2. Pour in olive oil, add garlic and chopped onion and sauté for 30 seconds. Once complete, add in toasted pine nuts and kale. Mix well. After approximately 4-5 minutes, the kale should begin to wilt. Add a pinch of salt and wine (or substitute wine with water).
3. Let liquid boil and evaporate before you remove mixture from heat. Place in a bowl, add Mike and Mike’s Organics Cranberries and a pinch of ground black pepper. Once it cools, enjoy!
